Easy Mushroom Gravy
Gravy makes everything better. Its fabulous on top of mashed potatoes, air fries, holiday lentil loaf and green peas. This gravy has all the flavor of traditional gravy without all the fat and cholesterol. You can use whatever mushrooms you prefer - but I like the Swiss brown buttons. For me, they have the best flavor - not too overpowering for children and mushroom naysayers.

Ingredients
1 punnet (1/2 lb) of Swiss Brown Button Mushrooms - sliced
2 Tbsp wholemeal flour (or garbanzo bean four)
1 tsp (or more to taste) crushed garlic
1 1.2 cups. vegetable stock
1/2 red (or brown) onion - diced
1 Tbsp mixed Italian herbs (or poultry seasoning)
2 Tbsp nutritional yeast
1 tsp miso paste (sub 1 tsp
Optional but awesome:
2-4 Drops liquid smoke
1 tsp vegan Worcestershire sauce
1/4 cup Vegan alcohol-free red wine
Method
Pro tip: Use an enamel clad cast iron saucepan.
Prepare ingredients (get to chopping)
Sauté the onion, garlic, mushrooms in a dry saucepan, stirring constantly. Allow a little brown to stick to the sides - this is where the flavor is.
Add herbs and a little more stock. Deglaze the pan with more stock, releasing the flavors into the juice.
When veggies are soft and browned, transfer them to a high speed blender with all other ingredients (except the wine) and blend till smooth.
Return mixture to the saucepan and cook for 5-10 minutes.
Add the wine if using. If not, add more veggie stock to desired consistency.
