Sweet Potato Brownies

Sweet Potato Brownies

The only person in the world I know who doesn't like chocolate is my mum. I think she's the only one. I love this recipe because it's so easy and yummy. It's very forgiving so you can mess with the quantities and these brownies will still turn out AWESOME!

Ingredients

1 cup of orange sweet potato (pre-baked and very squishy)

1/2 cup wholemeal flour (or or oat flour for GF)

1/2 cup peanut butter or almond butter (use PB2 and water for a lower fat version and Sun butter for nut-free)

2-4 Tbsp plant-based milk

1/2 cup unsweetened cocoa powder

1/2 cup chopped dates (soaked in a little boiling water to rehydrate for 5 minutes)

2 Tbsp maple syrup

1 tsp vanilla extract

1 shot cold espresso - optional but fabulous

1 tsp baking powder

1/4 cup + 1 Tbsp dairy-free semi sweet or unsweetened chocolate chips

Method

  1. Line an 8" square baking tin with parchment paper.

  2. Pre-heat oven to 350˚F (180˚C).

  3. In a food processor or large mixing bowl blend the sweet potato, dates, nut butter, maple syrup, vanilla extract and coffee till smooth.

  4. In a separate mixing bowl, mix the flour, cocoa powder and baking powder.

  5. With the food processor on slow, gradually add the dry ingredients to the wet. Use a little plant milk if the mixture is too firm.

  6. Turn off the food processor and remove the blade. Add 1/4 cup of chocolate chips and stir in.

  7. Transfer the mixture to the baking tray and spread out evenly. Top with the remaining chocolate chips.

  8. Bake at 350˚F (180˚C) for 25-30 minutes. Let cool before slicing into 16 pieces.

  9. Freeze so you can enjoy for longer.

  • Be open to new flavors and try new things.

  • When at restaurants, order the plant-based option.

  • Instead of dairy milk, use plant-based milk in your coffee and cereal. If you don't like the taste, try another brand.

  • Unless you want to, there's no need to swap out everything all at once. One step at a time is fine. Eventually, you will crowd out all the unhealthy animal products with healthy plant-based foods.
